Adobo pork chops
Delicious adobo pork chops salad recipe that combines savory pork, zesty marinade, and crisp vegetables for a culinary explosion of flavor.
Ingredients:
- 2 tablespoons canola oil
- 1 small white onion, chopped
- 2 garlic cloves, chopped
- 40g dried guajillo chiles, stemmed, seeded and cut into 2-inch pieces
- 1 1/2 cups low-sodium chicken broth
- Pinch of sugar
- Kosher salt
- Pepper
- Four 1-inch-thick, bone-in pork rib chops
- Corn salad, for serving
Instructions:
- Heat the oil in a medium saucepan. Cook the onion over medium heat until softened, stirring occasionally for about 5 minutes. Stir in the garlic and chiles and cook for 2 minutes until fragrant. Pour in the broth and bring it to a boil. Let the sauce simmer over medium heat, stirring occasionally, until the chiles are soft for about 5 minutes.
- Put the mixture into a blender, add sugar, and blend until it becomes smooth. Move the adobo sauce to a bowl and season it with salt and pepper.
- Prepare a grill and grease the grate. Season the chops with salt and pepper, then coat them with 3/4 cup of the adobo sauce. Grill the chops over medium heat, turning every 5 minutes, and brush with the remaining 3/4 cup of sauce until they are fully cooked, for about 20 minutes. Place the chops on plates, let them sit for 5 minutes, and serve with corn salad.
