Addictive raw kale salad with crispy prosciutto and parmesan cheese
Indulge in the flavors of this irresistible raw kale salad topped with crispy prosciutto and savory parmesan cheese. A taste sensation!
Ingredients:
- 1 bunch curly or lacinato kale, center ribs discarded and leaves thinly sliced
- 5 cloves garlic, peeled and thinly sliced
- 90g prosciutto, thinly sliced
- 1/2 cup freshly grated parmesan cheese
- 1 lemon
- 2 tablespoons good quality balsamic vinegar
- 3 tablespoons good quality extra virgin olive oil
Instructions:
- Preheat a nonstick skillet on medium heat and cook the thinly sliced prosciutto until it becomes very crispy, for about 5 minutes, stirring occasionally to break it into smaller pieces.
- Place the cooked prosciutto on a dish lined with paper towels to soak up the excess oil, and take the skillet off the heat. Pour the garlic and olive oil into the warm skillet right away to let the oil absorb the garlic flavor.
- Season the kale with 1/4 teaspoon of salt and squeeze the juice of a lemon over it. Gently massage the kale for 1-2 minutes until it starts to soften.
- Combine the prepared garlic-infused oil, cheese, prosciutto, and vinegar with the kale. Add more salt and black pepper to your liking. Garnish with extra grated parmesan cheese and a drizzle of balsamic vinegar before serving.
