Acorn squash pizza

Ingredients:

  • 450g pizza dough (or less if you prefer a thinner crust)
  • 1 cup fresh cherry tomatoes
  • Kosher salt and freshly ground pepper
  • 1 tablespoon olive oil
  • 1/2 acorn squash (about 230g), peeled and very thinly sliced (with a mandolin, ideally)
  • 1 garlic clove, sliced
  • 1 red chile, such as Fresno, sliced
  • 60g provolone picante, coarsely grated
  • Lemon wedges, for serving
  • 2 tablespoons sliced basil
  • Salad for serving, if desired

Instructions:

  1. Preheat the oven to 475°F and place a rimmed baking sheet upside down on the bottom rack. Let it preheat for about 8 minutes.
  2. On a parchment paper sprinkled with cornmeal, use a rolling pin dusted with flour to flatten the pizza dough into a large circle, approximately 1?4 inch thick. Season tomatoes with salt, pepper, and oil in a bowl, then crush them together with your hands. Add squash, garlic, and chilies, mix well.
  3. Spread the squash over the dough evenly and sprinkle cheese on top. Carefully take out the hot baking sheet from the oven, transfer the dough on parchment paper onto it. Bake until the crust turns golden and crisp, about 8 to 10 minutes. Just before serving, add basil on top of the pizza and squeeze fresh lemon juice. Serve immediately with a side salad, if preferred.
