A taste of home seven layer salad
Indulge in a delightful blend of fresh vegetables, creamy dressing, and crispy toppings in this delicious Seven Layer Salad recipe.
Ingredients:
- 60g red wine vinegar
- Juice of 1 lime
- 1 tablespoon whole-grain Dijon mustard
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 230g olive oil
- Sea or kosher salt and pepper to taste
- 2 cups cooked black beans
- 2 cups cooked rice of any color (I had Bhutanese red)
- 2 cups cooked lentils (I had yellow)
- 2 cups corn stripped from the cob, or frozen (thawed)
- 2 or 3 ribs celery, finely diced
- 1 large or 2 smallish red onions, finely diced
- 1 cucumber, peeled, seeded, 1/2" dice
Instructions:
- Prepare the dressing. Combine the vinegar, lime juice, mustard, cumin, and coriander in a bowl. Gradually pour in the olive oil while whisking continuously. Season with salt and pepper to your liking.
- Dice the celery and red onion finely (in 1/4-inch pieces). If desired, remove the skin from the cucumber to avoid bitterness; cut it in half lengthwise, then scoop out the seeds with a spoon to prevent excess water in the salad. Dice the cucumber into 1/2-inch cubes.
- Start assembling your salad. When using jars, add approximately 2 tablespoons of each ingredient in layers. For a bowl, keep the layers shallow (no more than half to one inch deep) for a visually appealing presentation. Begin with black beans at the bottom as they can soak up the dressing well. Layer the celery next for its sturdiness and vibrant color. Drizzle about 2 tablespoons of dressing over the celery. Continue layering with yellow lentils, red rice, red onions, yellow corn, tender cucumbers, and the remaining dressing. Seal the jars with lids, store them in the fridge overnight. If using a bowl, cover tightly with plastic wrap to preserve the flavors.
- For easy transportation, place the jars back in their original box. Although some lids and rings may go missing, they can be replaced inexpensively.
- Stock your freezer with leftovers, spend a few bucks on a dozen jars, and impress yourself with your meal prep skills. It's a clever and convenient way to enjoy your delicious salads.
