A salad of brussels sprouts, clementines, and russet apple

Ingredients:
- 175g (170g) Brussels sprouts
- 2 clementines or other small citrus
- A russet apple
- 1 tablespoon sesame seeds
- 2 tablespoons olive oil
- A handful skinned almonds
- A large handful flat-leaf parsley leaves
- A clementine
- A lemon
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
Instructions:
- Start by heating a large pot of water until it boils. Trim the sprouts, discard the outer leaves, and place them in a bowl of cold water. Cut the remaining sprouts into quarters and add them to the leaves. Rinse well, then drain the water. Season the boiling water with a small amount of salt, then add the sprouts. Let them cook for a maximum of two minutes, until they become vibrant in color.
- Prepare a bowl of water with ice cubes or very cold water. Drain the sprouts and transfer them to the ice water. This will halt the cooking process.
- Peel the clementines and cut them into thin slices, placing them in a salad bowl. Cut the apple into thin segments after halving it, ensuring to remove any seeds. Mix the apples with the clementines.
- In a dry skillet, toast the sesame seeds until they turn a rich golden color. Transfer half of the seeds to a small bowl and the other half to the clementines and sprouts. Place the skillet back on heat, add oil followed by the almonds. Cook the almonds, stirring occasionally, until they are golden and fragrant. Season lightly with salt, then remove from heat and place on paper towels.
- Pat dry the sprouts and leaves, then combine them gently with the apples and clementines. Squeeze the clementine and lemon, and mix the juice with the reserved sesame seeds. Whisk in the olive oil, white wine vinegar, and honey. Season with salt and black pepper, and use this mixture to dress the salad.
