A fancy and beautiful tomato, cucumber, and carrot salad

Indulge in the delightful flavors of a vibrant tomato, crisp cucumber, and crunchy carrot salad. A perfect fusion of freshness and color on your plate.

Ingredients:

  • 1 large tomato (mine was about 280g)
  • 8-280g mixed cherry tomatoes
  • 3 carrots
  • 1 English cucumber
  • 3-110g feta cheese
  • 2 cups pita chips
  • 1 tablespoon harissa
  • 1 tablespoon olive oil
  • 1/2 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon fresh pepper

Instructions:

  1. Dice the tomato into 12-16 wedges, and place them in a salad bowl
  2. Cut the cherry tomatoes into quarters, and add them to the salad bowl
  3. Slice the carrots thinly into discs, and include them in the salad bowl
  4. Slice the cucumber lengthwise into thin spears and then cut them into 1-inch sections, add to the salad bowl
  5. Chop the feta cheese into rough pieces, and add to the salad bowl
  6. Combine the harissa and olive oil in a large mixing bowl until mixed well, then toss in the 2 cups of pita chips until they are coated evenly
  7. Add the pita chips and any remaining harissa and oil to the salad bowl, mix well, and dress with lemon juice, salt, and pepper
