12-minute pasta salad

Ingredients:

  • 3 ears corn, or 2 1/2 cups frozen corn kernels, thawed
  • 1 pint grape or cherry tomatoes, halved
  • 6-8 large basil leaves, sliced thinly
  • 12-410g medium-sized whole-grain pasta
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoon sherry vinegar or fruit-infused vinegar

Instructions:

  1. Heat a large pot of water with some salt until it starts to boil.
  2. If the corn is exceptionally fresh, remove the kernels from the cob and put them in a spacious salad bowl. In case it's not, you can cook the corn quickly by microwaving or steaming it until it's slightly soft, which usually takes 3-5 minutes. Allow it to cool down before cutting it. Combine the tomatoes, basil, and any meat you prefer into the bowl.
  3. Once the water reaches a boil, follow the instructions on the pasta package to cook it properly. After cooking, let the pasta cool before combining it with oil and vinegar in the bowl. Season with salt and pepper according to your taste. Mix well and serve.
