10-minute sesame cucumber salad
Quick and refreshing sesame cucumber salad, bursting with flavors of sesame oil, rice vinegar, and crunchy cucumbers. Perfect for a light, healthy meal in just 10 minutes.
Ingredients:
- 1 Japanese cucumber or 4 Persian mini cucumbers (about 280g)
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- ¼ teaspoon grated garlic
- ¼ teaspoon grated ginger
- ⅛ teaspoon salt
- Pinch of sugar
- 1 teaspoon sesame seeds
Instructions:
- Remove skin from cucumber, leaving some green stripes. Cut the cucumber into quarters lengthwise (or halves if using Persian cucumbers) and slice into pieces that are half an inch thick. Use a paper towel to dry the slices and remove any excess water.
- In a medium bowl, mix together vinegar, sesame oil, garlic, ginger, and salt. Add the cucumber slices and mix well to cover them with the mixture. Serve with a sprinkle of sesame seeds on top.
