  • pepper to taste

Instructions:

  1. Wash the zucchini and cherry tomatoes thoroughly. Slice the zucchini into thin rounds and halve the cherry tomatoes.
  2. In a large mixing bowl, combine the sliced zucchini, fresh spinach leaves, and halved cherry tomatoes.
  3. Drizzle with olive oil and lemon juice, then toss gently to combine all ingredients.
  4. Season with salt and pepper to taste.
  5. Serve immediately as a light salad or side dish.
