Zucchini and Corn Fritters

These zucchini and corn fritters are a delicious and healthy snack option, perfect for any time of the day. Crispy on the outside and soft on the inside, they're great served with a tangy dipping sauce or on their own!

Ingredients:

  • 2 medium zucchini, grated
  • 150g corn, drained
  • 1 onion, finely chopped
  • 2 eggs, beaten
  • 100g flour
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, drained corn, finely chopped onion, and beaten eggs. Mix well.
  3. Gradually add the flour and season with salt and pepper to taste. Mix until combined.
  4. Heat oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten them slightly.
  5. Fry for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove from the pan and place on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.
