Zucchini and Corn Fritters
These zucchini and corn fritters are a delicious and healthy snack option, perfect for any time of the day. Crispy on the outside and soft on the inside, they're great served with a tangy dipping sauce or on their own!
Ingredients:
- 2 medium zucchini, grated
- 150g corn, drained
- 1 onion, finely chopped
- 2 eggs, beaten
- 100g flour
- Salt and pepper to taste
- Oil for frying
Instructions:
- Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
- In a mixing bowl, combine the grated zucchini, drained corn, finely chopped onion, and beaten eggs. Mix well.
- Gradually add the flour and season with salt and pepper to taste. Mix until combined.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan and flatten them slightly.
- Fry for about 3-4 minutes on each side until golden brown and crispy.
- Remove from the pan and place on paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
