Zucchini and Corn Fritters

These Zucchini and Corn Fritters are a delightful and easy-to-make appetizer, perfect for any gathering. Crispy on the outside and tender on the inside, they're bursting with fresh flavors!

Ingredients:

  • 2 medium zucchini, grated
  • 1 cup corn kernels
  • 1/2 cup flour
  • 2 eggs
  • 1/4 cup grated cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a bowl, mix the grated zucchini and corn kernels. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze out excess liquid from the zucchini and corn mixture.
  3. Add the minced garlic, flour, and eggs to the mixture, and stir until well combined.
  4. Heat oil in a frying pan over medium heat. Drop spoonfuls of the mixture into the pan, flattening them slightly to form fritters.
  5. Cook until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
