Zucchini and Corn Bread

A delicious and moist zucchini and corn bread perfect for a side dish or snack. Made with fresh zucchinis and sweet corn for a nutritious twist.

Ingredients:

  • 200g flour
  • 150g grated zucchini
  • 100g corn
  • 50g sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 100ml milk
  • 50g melted butter

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
  2. In a mixing bowl, combine the flour, baking powder, sugar, and salt.
  3. In another bowl, whisk together the eggs, milk, and melted butter.
  4. Add the grated zucchini and corn to the egg mixture and blend well.
  5. Gradually fold the wet ingredients into the dry ingredients until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
