Zesty Chicken Breast Salad with Sour Cream Dressing
This refreshing chicken salad features grilled boneless, skinless chicken breasts served over a vibrant bed of mixed salad greens, diced cucumber, halved cherry tomatoes, and thinly sliced red onion. Drizzled with a creamy dressing made from sour cream, olive oil, lemon juice, and garlic powder, this dish is garnished with fresh parsley for added flavor.
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups mixed salad greens (spinach, arugula, and romaine)
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup bell pepper, diced (any color)
- 1/2 cup sour cream
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Season the chicken breasts with salt, pepper, and garlic powder.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes.
- While the chicken is resting, prepare the salad base. In a large bowl, combine the mixed salad greens, diced cucumber, cherry tomatoes, red onion, and bell pepper.
- In a separate bowl, whisk together the sour cream, olive oil, lemon juice, and a pinch of salt and pepper to create the dressing.
- Slice the cooked chicken breast into strips and add it to the salad bowl.
- Pour the sour cream dressing over the salad and toss gently to combine all ingredients evenly.
- Garnish with fresh parsley and serve immediately.
