Veggie Zucchini Fritters

Delicious and crispy veggie zucchini fritters made with fresh ingredients, perfect for a healthy snack.

Ingredients:

  • 2 medium zucchini, grated
  • 1 carrot, grated
  • 1 small onion, finely chopped
  • 2 eggs
  • 100g flour
  • 50g cheese, grated
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Grate the zucchini and carrot, and finely chop the onion.
  2. In a bowl, combine the grated zucchini, carrot, and chopped onion.
  3. Add the eggs, flour, and grated cheese to the vegetable mixture. Season with salt and pepper.
  4. Mix well until all ingredients are combined.
  5. Heat a frying pan over medium heat and add oil.
  6. Scoop spoonfuls of the mixture into the pan, flattening them slightly.
  7. Fry each side for about 3-4 minutes or until golden brown.
  8. Remove from the pan and place on paper towels to absorb excess oil.
  9. Serve warm with your choice of dip.
