Ingredients:
- 2 medium zucchinis, grated
- 1 carrot, grated
- 1 medium onion, finely chopped
- 2 eggs
- 100g flour
- salt and pepper to taste
- oil for frying
Instructions:
- Grate the zucchinis and carrots. Squeeze out excess moisture from the grated zucchini using a clean cloth.
- In a large mixing bowl, combine the grated zucchini, grated carrot, and finely chopped onion.
- Add the eggs and flour to the vegetable mixture and mix until well combined. Season with salt and pepper to taste.
- Heat a non-stick pan over medium heat and add oil.
- Drop spoonfuls of the mixture into the hot oil and flatten them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on paper towels to drain excess oil.
