Veggie Zucchini Fritters

Crispy and delicious veggie zucchini fritters, perfect for a quick and healthy snack!

Ingredients:

  • 2 medium zucchinis, grated
  • 1 carrot, grated
  • 1 medium onion, finely chopped
  • 2 eggs
  • 100g flour
  • salt and pepper to taste
  • oil for frying

Instructions:

  1. Grate the zucchinis and carrots. Squeeze out excess moisture from the grated zucchini using a clean cloth.
  2. In a large mixing bowl, combine the grated zucchini, grated carrot, and finely chopped onion.
  3. Add the eggs and flour to the vegetable mixture and mix until well combined. Season with salt and pepper to taste.
  4. Heat a non-stick pan over medium heat and add oil.
  5. Drop spoonfuls of the mixture into the hot oil and flatten them slightly with the back of the spoon.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the pan and place them on paper towels to drain excess oil.
