Ingredients:

  • 250g mushrooms
  • 100g spinach
  • 50g cheese
  • 2 cloves garlic
  • 50g onion
  • 1 tbsp peanut oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. Clean the mushrooms and remove the stems, setting the caps aside.
  3. Finely chop the mushroom stems, spinach, garlic, and onion.
  4. Heat peanut oil in a pan over medium heat, then add the onion and garlic, sautéing until they are translucent.
  5. Add the chopped spinach and mushroom stems, cooking until the spinach wilts and the mixture is dry.
  6. Remove from heat and mix in cheese, salt, and pepper.
  7. Stuff each mushroom cap with the vegetable mixture.
  8. Place the stuffed mushrooms on a baking tray and bake for 15-20 minutes, until the mushrooms are tender and the tops are golden.
