Ingredients:
- 200g mushrooms
- 100g spinach
- 50g cream cheese
- 50g grated cheese
- 2 cloves garlic
- 1 onion
- 2 tbsp olive oil
Instructions:
- Preheat the oven to 180°C.
- Clean the mushrooms and remove the stems.
- Chop the mushroom stems finely and set aside.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
- Add the chopped mushroom stems and spinach to the skillet, cooking until the spinach is wilted.
- Remove from heat and stir in cream cheese and grated cheese until combined.
- Stuff the mushroom caps with the spinach and cheese mixture.
- Place the stuffed mushrooms on a baking tray and bake for 15-20 minutes or until golden brown.
