Veggie Stuffed Mushrooms

Delicious and savory stuffed mushrooms perfect as appetizers for any gathering. Loaded with healthy veggies and cheese, they're a crowd-pleaser!

Ingredients:

  • 200g mushrooms
  • 100g spinach
  • 50g cream cheese
  • 50g grated cheese
  • 2 cloves garlic
  • 1 onion
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 180°C.
  2. Clean the mushrooms and remove the stems.
  3. Chop the mushroom stems finely and set aside.
  4. In a skillet, heat olive oil over medium heat and sauté the chopped onion and garlic until translucent.
  5. Add the chopped mushroom stems and spinach to the skillet, cooking until the spinach is wilted.
  6. Remove from heat and stir in cream cheese and grated cheese until combined.
  7. Stuff the mushroom caps with the spinach and cheese mixture.
  8. Place the stuffed mushrooms on a baking tray and bake for 15-20 minutes or until golden brown.
  9. Serve warm as an appetizer.
