Ingredients:

  • 4 eggs
  • 1 small onion
  • 1 zucchini
  • 1 bell pepper
  • 2 tablespoons butter

Instructions:

  1. Crack the eggs into a bowl, whisk them until well combined, and season with salt and pepper.
  2. Heat the butter in a non-stick skillet over medium heat until melted.
  3. Add the chopped onion to the skillet and sauté until translucent.
  4. Add the diced zucchini and bell pepper to the skillet, cooking until tender.
  5. Pour the eggs into the skillet, tilting the pan to spread them evenly.
  6. Cook until the edges start to set, then gently lift the edges with a spatula and let the uncooked eggs flow underneath.
  7. Once the omelette is mostly set, fold it in half and cook for an additional minute.
  8. Slide the omelette onto a plate and serve hot.
