Veggie Omelette

A delicious and nutritious veggie omelette packed with fresh vegetables that is perfect for a healthy breakfast or brunch.

Ingredients:

  • 3 eggs
  • 1 carrot, grated
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions:

  1. In a bowl, whisk the eggs together with salt and pepper until well combined.
  2. Heat the butter in a non-stick skillet over medium heat.
  3. Add chopped onions and sauté until translucent, about 3-4 minutes.
  4. Stir in the grated carrot and chopped bell pepper, cooking for another 2 minutes.
  5. Pour the egg mixture over the sautéed vegetables, making sure it spreads evenly.
  6. Cook for about 3-5 minutes, until the edges start to set and the center is still slightly runny.
  7. Using a spatula, gently fold the omelette in half and let it cook for another minute.
  8. Slide the omelette onto a plate and serve warm.
