Veggie Omelette

A delicious and nourishing veggie omelette packed with fresh vegetables, perfect for a healthy breakfast or brunch.

Ingredients:

  • 3 eggs
  • 1/2 onion
  • 1/2 tomato
  • 1/2 bell pepper
  • 1/2 cup spinach
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions:

  1. Chop the onion, tomato, bell pepper, and spinach into small pieces.
  2. In a bowl, beat the eggs and add a pinch of salt and pepper.
  3. Heat the butter in a non-stick skillet over medium heat.
  4. Add the chopped onion and bell pepper to the skillet, sauté until softened.
  5. Add the tomato and spinach, cooking until the spinach is wilted.
  6. Pour the beaten eggs over the sautéed vegetables, tilting the pan to spread evenly.
  7. Cook until the edges start to set, then gently lift the edges to let the uncooked egg flow underneath.
  8. Once the omelette is mostly set but still slightly runny on top, fold it in half and cook for another minute.
  9. Slide the omelette onto a plate and serve hot.
