Veggie Omelette

A delicious and nutritious Veggie Omelette packed with fresh vegetables, perfect for breakfast or brunch.

Ingredients:

  • 3 eggs
  • 1 small onion, chopped
  • 1 small zucchini, diced
  • 50g spinach, chopped
  • Salt and pepper to taste
  • 1 tablespoon of butter

Instructions:

  1. In a bowl, beat the eggs and season with salt and pepper.
  2. In a non-stick skillet, melt the butter over medium heat.
  3. Add the chopped onion and diced zucchini. Cook until they are soft.
  4. Stir in the spinach and cook until wilted.
  5. Pour the beaten eggs over the vegetables, tilting the skillet to distribute evenly.
  6. Cook until the edges start to lift, then gently fold the omelette in half.
  7. Allow to cook for another minute until fully set and serve hot.
