Veggie Omelette

A tasty and nutritious veggie omelette perfect for breakfast or brunch. Packed with fresh vegetables and protein-rich eggs.

Ingredients:

  • 2 eggs
  • 1 small onion
  • 50g spinach
  • 50g mushrooms
  • 1 tbsp oil

Instructions:

  1. Heat the oil in a frying pan over medium heat.
  2. Add chopped onion and mushrooms, cooking until softened.
  3. Add the spinach and stir until wilted.
  4. Whisk the eggs in a bowl and pour over the vegetables in the pan.
  5. Cook until the edges begin to set, then gently lift the edges and allow uncooked egg to flow underneath.
  6. Once fully cooked, fold the omelette in half and serve hot.
