Veggie Omelette

A delicious and nutritious veggie omelette perfect for breakfast or brunch, packed with vegetables and protein to start your day right!

Ingredients:

  • 4 eggs
  • 1 cup spinach
  • 1/2 cup tomato
  • 1/4 cup onion
  • salt
  • pepper
  • butter

Instructions:

  1. In a bowl, crack the eggs and whisk them until well combined. Season with salt and pepper.
  2. Heat butter in a skillet over medium heat.
  3. Add diced onion and sauté until translucent.
  4. Add chopped tomatoes and spinach, cooking until spinach wilts.
  5. Pour the whisked eggs over the veggies in the skillet and cook until the edges begin to set.
  6. Gently lift the edges of the omelette to allow the uncooked egg to flow underneath.
  7. Once the omelette is fully set and slightly golden, carefully fold it in half and slide it onto a plate.
  8. Serve hot and enjoy!
