Veggie Omelette

A delicious and nutritious veggie omelette made with fresh vegetables, perfect for a healthy breakfast or brunch.

Ingredients:

  • 4 eggs
  • 1 onion
  • 1 tomato
  • 50g spinach
  • salt
  • pepper
  • butter

Instructions:

  1. In a bowl, crack the eggs and whisk them together with a pinch of salt and pepper.
  2. Chop the onion, tomato, and spinach into small pieces.
  3. In a non-stick skillet, melt some butter over medium heat.
  4. Add the onions to the skillet and sauté until they become translucent.
  5. Add the tomatoes and cook for an additional 2 minutes.
  6. Stir in the spinach and cook until wilted.
  7. Pour the beaten eggs over the sautéed vegetables, tilting the pan to ensure even coverage.
  8. Cook until the edges begin to set, then carefully lift the edges while tilting the pan to allow uncooked egg to flow underneath.
  9. Once the omelette is mostly set, fold it in half and let it cook for another minute before transferring it to a plate.
  10. Serve warm with additional salt and pepper to taste.
