A healthy and delicious Veggie & Avocado Wrap bursting with fresh flavors from vegetables and creamy avocado. Perfect for a quick lunch or a light dinner!

Ingredients:

  • 1 large whole wheat tortilla
  • 1 ripe avocado
  • 100g spinach
  • 50g bell pepper
  • 50g cucumber

Instructions:

  1. Start by preparing your vegetables. Chop the bell pepper and cucumber into thin slices.
  2. In a bowl, mash the avocado until smooth. You can add a pinch of salt and lime juice for extra flavor if you like.
  3. Lay the whole wheat tortilla on a flat surface.
  4. Spread the mashed avocado evenly over the tortilla.
  5. Layer the spinach, sliced bell pepper, and cucumber on top of the avocado spread.
  6. Roll the tortilla tightly, folding in the sides as you go, to create a wrap.
  7. Slice the wrap in half and serve immediately, or wrap in foil for a packed lunch.
