Veggie & Avocado Sandwich

A delicious and healthy veggie sandwich stuffed with fresh vegetables and creamy avocado, perfect for a quick lunch or snack.

Ingredients:

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1/2 cucumber, sliced
  • 1 medium tomato, sliced
  • a handful of spinach leaves
  • salt and pepper to taste

Instructions:

  1. Toast the slices of whole grain bread to your liking.
  2. In a bowl, mash the ripe avocado with a fork and season it with salt and pepper.
  3. Spread the mashed avocado evenly on both slices of toasted bread.
  4. Layer the sliced cucumber and tomato on one slice of bread.
  5. Add a generous handful of spinach leaves on top of the vegetables.
  6. Place the other slice of bread on top to complete the sandwich.
  7. Cut in half and serve immediately.
