Veggie & Avocado Sandwich
A delicious and healthy veggie sandwich stuffed with fresh vegetables and creamy avocado, perfect for a quick lunch or snack.
Ingredients:
- 2 slices whole grain bread
- 1 ripe avocado
- 1/2 cucumber, sliced
- 1 medium tomato, sliced
- a handful of spinach leaves
- salt and pepper to taste
Instructions:
- Toast the slices of whole grain bread to your liking.
- In a bowl, mash the ripe avocado with a fork and season it with salt and pepper.
- Spread the mashed avocado evenly on both slices of toasted bread.
- Layer the sliced cucumber and tomato on one slice of bread.
- Add a generous handful of spinach leaves on top of the vegetables.
- Place the other slice of bread on top to complete the sandwich.
- Cut in half and serve immediately.
