Veggie & Avocado Sandwich
A fresh and healthy Veggie & Avocado Sandwich packed with nutrients and flavor. Perfect for a light lunch or a quick snack!
Ingredients:
- 2 slices of whole grain bread
- 1 ripe avocado
- 1/2 cup spinach
- 1/2 tomato, sliced
- 1/4 cucumber, sliced
- Salt and pepper to taste
Instructions:
- Toast the slices of whole grain bread until golden brown.
- In a small bowl, mash the avocado with a fork until creamy. Season with salt and pepper to taste.
- Spread the mashed avocado generously over one side of each toasted bread slice.
- Layer the spinach, sliced tomato, and cucumber on one slice of bread.
- Top with the other slice, avocado side down, and press gently to secure the filling.
