Veggie & Avocado Sandwich

A fresh and healthy Veggie & Avocado Sandwich packed with nutrients and flavor. Perfect for a light lunch or a quick snack!

Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1/2 cup spinach
  • 1/2 tomato, sliced
  • 1/4 cucumber, sliced
  • Salt and pepper to taste

Instructions:

  1. Toast the slices of whole grain bread until golden brown.
  2. In a small bowl, mash the avocado with a fork until creamy. Season with salt and pepper to taste.
  3. Spread the mashed avocado generously over one side of each toasted bread slice.
  4. Layer the spinach, sliced tomato, and cucumber on one slice of bread.
  5. Top with the other slice, avocado side down, and press gently to secure the filling.
  6. Cut in half and serve immediately.
