Vegetarian Zucchini and Tomato Casserole

A delicious and wholesome vegetarian casserole made with zucchini, tomatoes, and topped with cheese, perfect for a hearty meal.

Ingredients:

  • 2 medium zucchinis, sliced
  • 2 large tomatoes, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 200g cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  3. Layer the sliced zucchinis and tomatoes in a baking dish, alternating between the two.
  4. Sprinkle the sautéed onion and garlic on top of the layered vegetables.
  5. Season with salt, pepper, and fresh herbs if using.
  6. Top the casserole with shredded cheese evenly over the top.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden brown.
  8. Allow to cool slightly before serving.
