Vegetarian Zucchini and Tomato Casserole
A delicious and wholesome vegetarian casserole made with zucchini, tomatoes, and topped with cheese, perfect for a hearty meal.
Ingredients:
- 2 medium zucchinis, sliced
- 2 large tomatoes, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 200g cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions:
- Preheat the oven to 180°C.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Layer the sliced zucchinis and tomatoes in a baking dish, alternating between the two.
- Sprinkle the sautéed onion and garlic on top of the layered vegetables.
- Season with salt, pepper, and fresh herbs if using.
- Top the casserole with shredded cheese evenly over the top.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden brown.
- Allow to cool slightly before serving.
