Ingredients:

  • 250g zucchini
  • 1 medium onion
  • 2 cloves garlic
  • 2 eggs
  • 100g flour
  • salt
  • pepper
  • sunflower oil for frying

Instructions:

  1. Grate the zucchini and place it in a clean towel to drain excess moisture.
  2. In a mixing bowl, combine grated zucchini, finely chopped onion, minced garlic, and eggs.
  3. Add flour, salt, and pepper to the mixture and stir until well combined.
  4. Heat sunflower oil in a pan over medium heat.
  5. Scoop a tablespoon of the mixture into the pan and flatten it slightly to form a fritter.
  6. Cook for 3-4 minutes on each side or until golden brown. Repeat with remaining mixture.
  7. Drain on paper towels and serve warm.
