Vegetable Stuffed Zucchini Boats

Delicious and healthy zucchini boats stuffed with a flavorful vegetable mixture, perfect as an appetizer.

Ingredients:

  • 2 medium zucchini
  • 1 carrot, grated
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 cup corn, fresh or frozen
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the center using a spoon, creating a boat shape.
  3. In a frying pan, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the grated carrot, diced tomatoes, and corn to the pan, cooking for another 5 minutes.
  5. Season the mixture with salt, pepper, and fresh herbs if desired.
  6. Fill each zucchini boat with the vegetable mixture and place them on a baking sheet.
  7. Bake in the preheated oven for about 20 minutes or until the zucchini is tender.
  8. Serve warm as a delicious appetizer.
