Vegetable Stuffed Zucchini Boats
Delicious and healthy zucchini boats stuffed with a flavorful vegetable mixture, perfect as an appetizer.
Ingredients:
- 2 medium zucchini
- 1 carrot, grated
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 cup corn, fresh or frozen
- 1 teaspoon olive oil
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions:
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the center using a spoon, creating a boat shape.
- In a frying pan, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the grated carrot, diced tomatoes, and corn to the pan, cooking for another 5 minutes.
