Vegetable Stuffed Mushrooms
Delicious and healthy vegetable stuffed mushrooms perfect as appetizers. Filled with a mix of fresh vegetables, these mushrooms are easy to make and packed with flavor!
Ingredients:
- 250g mushrooms
- 100g spinach
- 50g onion
- 50g bell pepper
- 30g cheese
Instructions:
- Preheat the oven to 180°C.
- Clean the mushrooms by removing the stems and setting them aside.
- Chop the onion and bell pepper finely, and sauté them in a pan until soft.
- Add the chopped spinach to the pan and cook until wilted.
- Mix in the cheese and stir until melted; season with salt and pepper to taste.
- Stuff each mushroom cap with the vegetable mixture.
- Place the stuffed mushrooms on a baking tray and bake for 15-20 minutes until golden.
- Serve warm and enjoy!
