Vegetable Stuffed Mushrooms

Delicious and healthy vegetable stuffed mushrooms perfect as appetizers. Filled with a mix of fresh vegetables, these mushrooms are easy to make and packed with flavor!

Ingredients:

  • 250g mushrooms
  • 100g spinach
  • 50g onion
  • 50g bell pepper
  • 30g cheese

Instructions:

  1. Preheat the oven to 180°C.
  2. Clean the mushrooms by removing the stems and setting them aside.
  3. Chop the onion and bell pepper finely, and sauté them in a pan until soft.
  4. Add the chopped spinach to the pan and cook until wilted.
  5. Mix in the cheese and stir until melted; season with salt and pepper to taste.
  6. Stuff each mushroom cap with the vegetable mixture.
  7. Place the stuffed mushrooms on a baking tray and bake for 15-20 minutes until golden.
  8. Serve warm and enjoy!
