Vegetable Stuffed Mushrooms

Deliciously baked mushrooms filled with a mix of chopped vegetables, perfect for appetizers.

Ingredients:

  • 200g mushrooms
  • 1 carrot
  • 1 zucchini
  • 1 clove garlic
  • 50g cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Remove the stems from the mushrooms and chop them finely.
  3. In a pan, heat olive oil over medium heat and sauté the garlic until fragrant.
  4. Add the chopped mushroom stems, carrot, and zucchini to the pan and cook for about 5 minutes until softened.
  5. Remove from heat and mix in cheese, salt, and pepper.
  6. Stuff the mushroom caps with the vegetable mixture.
  7. Place the stuffed mushrooms on a baking tray and bake in the oven for 15-20 minutes until golden brown.
  8. Serve warm as an appetizer.
