Vegetable Stuffed Mushrooms
Deliciously baked mushrooms filled with a mix of chopped vegetables, perfect for appetizers.
Ingredients:
- 200g mushrooms
- 1 carrot
- 1 zucchini
- 1 clove garlic
- 50g cheese
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions:
- Preheat the oven to 180°C.
- Remove the stems from the mushrooms and chop them finely.
- In a pan, heat olive oil over medium heat and sauté the garlic until fragrant.
- Add the chopped mushroom stems, carrot, and zucchini to the pan and cook for about 5 minutes until softened.
- Remove from heat and mix in cheese, salt, and pepper.
- Stuff the mushroom caps with the vegetable mixture.
- Place the stuffed mushrooms on a baking tray and bake in the oven for 15-20 minutes until golden brown.
- Serve warm as an appetizer.
