Vegetable Spring Rolls

These fresh and healthy vegetable spring rolls make for a perfect appetizer, filled with vibrant veggies and served with a tasteful dipping sauce!

Ingredients:

  • carrot
  • cucumber
  • bell pepper
  • spinach
  • peanut oil

Instructions:

  1. Wash and prepare all vegetables: julienne the carrot, slice the cucumber and bell pepper into thin strips, and chop the spinach.
  2. Soften the rice paper wrappers in warm water for a few seconds until pliable.
  3. Place a rice paper wrapper on a clean surface, then layer a few strips of carrots, cucumber, bell pepper, and a handful of spinach in the center.
  4. Fold the sides of the wrapper over the filling and then tightly roll from the bottom up to make a secure roll.
  5. Repeat the process with the remaining wrappers and filling ingredients.
  6. Serve the spring rolls cold or at room temperature with a dipping sauce of your choice.
