Vegetable Spring Rolls

These fresh and crispy vegetable spring rolls are a delightful appetizer made with vibrant vegetables and a light dipping sauce.

Ingredients:

  • 150g rice paper
  • 50g carrots
  • 50g cucumber
  • 50g bell pepper
  • 50g lettuce
  • 50g avocado
  • 30ml peanut oil
  • soy sauce for dipping

Instructions:

  1. Prepare the vegetables by julienning the carrots, cucumber, and bell pepper, and slicing the avocado thinly.
  2. Soak the rice paper in warm water for about 10 seconds or until pliable.
  3. Lay the soaked rice paper on a clean surface and layer a small amount of each vegetable and some lettuce in the center.
  4. Roll the rice paper tightly around the filling, folding in the sides as you go to secure the filling inside.
  5. Repeat the process with the remaining rice paper and filling.
  6. Serve the spring rolls with soy sauce for dipping.
