Vegetable Soup

A hearty and nutritious vegetable soup packed with flavors from fresh vegetables. Perfect for a comforting meal any time of the year.

Ingredients:

  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups of vegetable broth
  • 1 zucchini, sliced
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the sliced carrots and diced potatoes; cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the sliced zucchini and cook for another 10 minutes or until all the vegetables are tender.
  6. Stir in the chopped spinach and season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes.
  8. Serve hot and enjoy.
