A hearty and nutritious vegetable soup made with fresh ingredients, perfect for warming up on a chilly day.

Ingredients:

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 zucchini, diced
  • 2 cups spinach
  • 1 garlic clove, minced
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Next, add the diced carrots and potatoes, stirring occasionally for about 5 minutes.
  4. Add the zucchini and cook for an additional 3 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Once boiling, reduce the heat and let simmer for 15 minutes or until all vegetables are tender.
  7. Stir in the spinach and allow to wilt for about 2-3 minutes.
  8. Season with salt and pepper to taste before serving.
