  • 2 tomatoes, chopped
  • 1 zucchini, diced

  • 4 cups vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Stir in the diced carrot, potato, and zucchini; cook for about 5 minutes.
  4. Add the chopped tomatoes and broccoli florets, mixing well.
