Vegetable Soup

A wholesome and hearty vegetable soup packed with nutrients from a variety of vegetables, perfect for a comforting meal.

Ingredients:

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 1 cup spinach
  • 1 liter vegetable stock
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the diced carrots and potatoes, cooking for about 5 minutes.
  4. Add the chopped tomatoes and zucchini; cook for another 3 minutes.
  5. Pour in the vegetable stock and bring to a boil.
  6. Reduce heat and let simmer for 15-20 minutes until the vegetables are tender.
  7. Add spinach and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste and serve hot.
