Vegetable Soup

A hearty and nutritious vegetable soup made with fresh ingredients that is perfect for any season.

Ingredients:

  • 1 medium potato
  • 1 carrot
  • 1 onion
  • 2 cloves garlic
  • 2 ripe tomatoes
  • 100g broccoli
  • 100g spinach
  • 1L vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Chop the potato, carrot, onion, and garlic into small pieces.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, sauté until translucent.
  4. Add the diced potato, carrot, and chopped tomatoes to the pot, stirring well.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and simmer for about 15 minutes, or until the vegetables are tender.
  7. Add the broccoli and spinach, cooking for an additional 5 minutes.
  8. Season with salt and pepper to taste before serving.
