Vegetable Soup

A hearty and nutritious vegetable soup made with fresh vegetables and spices, perfect for a warm meal.

Ingredients:

  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 1 liter vegetable broth
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat some oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the diced carrots and potatoes to the pot, stirring for a few minutes to combine them with the onions and garlic.
  3. Add the chopped tomatoes and diced zucchini; cook for an additional 5 minutes until the vegetables start to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for about 20 minutes or until all the vegetables are tender.
  6. Stir in the chopped spinach and continue to simmer for another 5 minutes.
  7. Season with salt and pepper to taste before serving.
