Vegetable Soup

Ingredients:

  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 1 zucchini, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. Heat a large pot over medium heat and add a small amount of oil.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Stir in the diced carrots and potatoes, cook for a few minutes.
  4. Add the diced zucchini and chopped tomatoes, stir well.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat and let it simmer for about 20-30 minutes until the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.
