Ingredients:

  • 1 medium carrot, diced
  • 1 medium potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 ripe tomatoes, chopped
  • 1 zucchini, diced
  • 1 liter of vegetable broth
  • Salt to taste
  • Pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and sauté until the onion becomes translucent.
  3. Stir in the diced carrot, potato, and zucchini, cooking for about 5 minutes.
  4. Add the chopped tomatoes and vegetable broth to the pot, bringing it to a boil.
  5. Reduce heat to low and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  6. Season with salt and pepper to taste. Serve hot.
