Vegetable Soup

A hearty vegetable soup packed with nutrients and flavor, perfect for any meal.

Ingredients:

  • 2 carrots, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 zucchini, diced
  • 1 cup broccoli florets
  • 1 cup spinach
  • 4 cups vegetable broth
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until onion is translucent.
  3. Stir in the diced carrots and potatoes, cooking for about 5 minutes.
  4. Add the diced tomatoes and zucchini, cook for another 5 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce heat to a simmer, add broccoli and spinach, and cook for 10-15 minutes until all vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy your healthy vegetable soup.
