Ingredients:

  • 1 carrot, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 100g broccoli florets
  • 1 zucchini, diced
  • 1 liter vegetable broth
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Stir in the diced carrot and potato, cook for about 5 minutes.
  4. Add the chopped tomatoes and zucchini, cook for an additional 5 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the broccoli florets and season with salt and pepper.
  7. Reduce heat and let simmer for 20-25 minutes, until vegetables are tender.
  8. Serve hot, garnished with fresh herbs if desired.
