Vegetable Soup

A hearty and wholesome vegetable soup packed with nutrients, perfect for a cozy meal.

Ingredients:

  • 1 large carrot, diced
  • 1 medium potato, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 zucchini, diced
  • 100g spinach, chopped
  • 1 liter vegetable broth
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced carrot and potato, cooking for about 5 minutes.
  4. Add the chopped tomatoes and zucchini, and cook for another 5 minutes.
  5. Pour in the vegetable broth, and bring the mixture to a boil.
  6. Reduce heat and let it simmer for about 15 minutes, or until all vegetables are tender.
  7. Add the chopped spinach and stir until wilted.
  8. Season with salt and pepper to taste, then serve warm.
