Ingredients:

  • 200g pasta
  • 1 carrot
  • 1 zucchini
  • 1 bell pepper
  • 2 cloves garlic
  • 1 tomato
  • 30g cheese
  • 2 tablespoons olive oil
  • Salt
  • Pepper

Instructions:

  1. Cook the pasta according to the package instructions until al dente.
  2. While the pasta cooks, heat olive oil in a pan over medium heat.
  3. Add chopped garlic, diced carrot, zucchini, and bell pepper to the pan. Sauté until the vegetables are tender.
  4. Stir in diced tomatoes, and cook for another 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Drain the pasta and add it to the vegetable mixture in the pan. Toss to combine.
  7. Serve hot, topped with grated cheese.
