Ingredients:

  • 200g pasta
  • 1 carrot
  • 1 zucchini
  • 1 bell pepper
  • 2 cloves garlic
  • 200g tomato
  • 25g cheese

Instructions:

  1. Cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, chop the carrot, zucchini, and bell pepper into bite-sized pieces.
  3. In a large pan, heat some sunflower oil over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the chopped vegetables to the pan and cook for about 5-7 minutes, until they are tender.
  5. Add the diced tomatoes and stir well. Let it simmer for another 5 minutes.
  6. Once the pasta is cooked, drain and add it to the pan with the vegetable mixture. Toss everything together.
  7. Serve hot, topped with grated cheese.
