Ingredients:

  • 250g pasta
  • 1 carrot
  • 1 zucchini
  • 1 bell pepper
  • 2 cloves garlic
  • 200g spinach
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add diced carrot, zucchini, and bell pepper to the skillet. Cook for 5-7 minutes until the vegetables are tender.
  4. Stir in the spinach and cook until wilted.
  5. Add the cooked pasta to the skillet. Toss to combine and season with salt and pepper to taste.
  6. Serve hot, topped with grated Parmesan cheese if desired.
