Vegetable Pasta Medley

Ingredients:

  • 250g pasta
  • 1 carrot
  • 1 tomato
  • 1 zucchini
  • 2 cloves garlic
  • 50g spinach

Instructions:

  1. Boil a large pot of salted water and add the pasta, cooking according to package instructions until al dente.
  2. While the pasta is cooking, chop the carrot, tomato, and zucchini into small pieces.
  3. In a pan, heat some olive oil over medium heat and add minced garlic, sautéing until fragrant.
  4. Add the chopped carrot and zucchini to the pan, cooking for about 5 minutes until they start to soften.
  5. Stir in the chopped tomato and cook for another 3 minutes.
  6. Add the spinach and cook until wilted, which should take about 2 minutes.
  7. Once the pasta is ready, drain it and add it to the pan with the vegetables, mixing well to combine everything.
