Ingredients:

  • 200g pasta
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 200g spinach
  • 200g tomato, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated cheese for serving

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the diced carrot, zucchini, and bell pepper to the pan. Cook for about 5-7 minutes until they begin to soften.
  4. Stir in the chopped tomatoes and spinach, cooking until the spinach wilts and the tomatoes are heated through.
  5. Add the cooked pasta to the vegetable mixture and toss until well combined. Season with salt and pepper to taste.
  6. Serve hot, topped with grated cheese if desired.
